Gluten Free Banana Bread with Crumb Topping
This delicious gluten free banana bread is sure to become a new family favorite. This recipe makes enough for 1 large loaf of bread. I always double it!
- 4 Tbsp butter, melted
- 1/2 cup sugar or honey
- 2 eggs, beaten
- 1 cup banana, mashed
- 1 3/4 cups Pamela's Baking & Pancake Mix
- 1/2 teaspoon salt
- 1 teaspoon vanilla
Preheat oven to 350°.
Crumble Topping: Add brown sugar, baking mix and cinnamon to the softened butter. Mix until the mixture begins to look lumpy. I find that mixing with a fork helps. Break up larger pieces with fingers if needed.
Beat together butter, sugar or honey, eggs and banana. Add remaining ingredients and mix together. Pour into a greased 8" x 4" or 9" x 5" loaf pan. Sprinkle the crumb topping evenly all over the banana bread mix. Bake for 1 hour, or until an inserted toothpick comes out clean.
