Gluten Free Blender Banana Bread with Crumb Topping

So Tara truth: I always buy an extra bushel of bananas (is that what a pack of bananas is called?) when I go to the grocery store just so that I can make banana bread with the extras. We LOVE banana bread at our house. We turn them into mini loaves, muffins, big loaves.. we don’t discriminate when it comes to banana bread. This recipe is awesome because it is totally gluten free, still moist, easy and just delicious! I hope you love it as much as we do.

Another thing that is awesome is I just make my the whole thing in my blender….with the exception of the crumb topping!

And that crumb topping is SO SO good. Don’t forget the topping… it’s just a few ingredients too…

I always have to double the recipe but the recipe below just makes one loaf. You’re going to sprinkle the topping over the batter and pop them in the oven!

Pop it in a 350 degree oven and pretty soon you’ll be smelling the most delicious baked bread! Yum!

Delicious, not crumbly and MOIST. Sorry, I had to.

Now slice it up while its warm, slather on some butter if you’re feeling naughty and eat it up! {and if you don’t own a butter crock, you need one asap! You’ll always have soft butter!}

Gluten Free Banana Bread with Crumb Topping

This delicious gluten free banana bread is sure to become a new family favorite. This recipe makes enough for 1 large loaf of bread. I always double it!

Ingredients
  

  • 4 Tbsp butter, melted
  • 1/2 cup sugar or honey
  • 2 eggs, beaten
  • 1 cup banana, mashed
  • 1 3/4 cups Pamela's Baking & Pancake Mix
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla

Cinnamon Crumb Topping

Instructions
 

  • Preheat oven to 350°.
  • Crumble Topping: Add brown sugar, baking mix and cinnamon to the softened butter. Mix until the mixture begins to look lumpy. I find that mixing with a fork helps. Break up larger pieces with fingers if needed.
  • Beat together butter, sugar or honey, eggs and banana. Add remaining ingredients and mix together. Pour into a greased 8" x 4" or 9" x 5" loaf pan. Sprinkle the crumb topping evenly all over the banana bread mix. Bake for 1 hour, or until an inserted toothpick comes out clean.
