Pasta Salad

Ingredients
  

  • 10 ounces elbow noodles, cooked according to package We prefer ours cooked al dente
  • 1 cup halved grapes
  • 2 celery stalks, chopped
  • 2 cups shredded chicken I used 2 cans of Costco chicken in a pinch!
  • 1 large can mandarin oranges, halved
  • Optional: add apples & almonds
  • Dressing: Brianna’s Poppyseed dressing to taste

Instructions
 

  • Prep all of your pasta salad ingredients by cooking the pasta, chopping the celery, grapes, chicken and mandarin oranges
  • Combine all pasta salad ingredients in a large bowl. Mix.
  • Add dressing to taste. I don’t really measure it. I just pour on a nice healthy coat all over the noodles. Less is more! The people who like a lot of sauce can add more to their bowls.

Notes

It stores great in the fridge for a few days**. This has become our camping & poolside go to meal.
If cooking this with gluten free noodles, it lasts a day max before the noodles get a weird texture. If making this with regular noodles, it will easily last 3-4 days in the fridge!
