I’m not kidding when I say my family lives for this salad!
It stores great in the fridge for a few days and has become our camping & poolside go to meal.
One thing I love about recipes like this is how fresh they always taste, the amount of healthy ingredients I can jam in here, and I love that it takes me less than 5 minutes to throw it all together (minus the noodle cook time).
But even with the noodle cook time, this is a recipe that packs way more of a yummy punch than time it takes to throw together – so rare with recipes this basic.

If cooking this with gluten free noodles, it lasts a day max before the noodles get a weird texture. If making this with regular noodles, it will easily last 3-4 days in the fridge!

Pasta Salad
Ingredients
- 10 ounces elbow noodles, cooked according to package We prefer ours cooked al dente
- 1 cup halved grapes
- 2 celery stalks, chopped
- 2 cups shredded chicken I used 2 cans of Costco chicken in a pinch!
- 1 large can mandarin oranges, halved
- Optional: add apples & almonds
- Dressing: Brianna’s Poppyseed dressing to taste
Instructions
- Prep all of your pasta salad ingredients by cooking the pasta, chopping the celery, grapes, chicken and mandarin oranges
- Combine all pasta salad ingredients in a large bowl. Mix.
- Add dressing to taste. I don’t really measure it. I just pour on a nice healthy coat all over the noodles. Less is more! The people who like a lot of sauce can add more to their bowls.

Do you have any substitutes for Brianna’s Poppyseed Dressing (without ordering it online)? Is there another brand with similar flavors, or a homemade version? I live in the middle of no-where in ND.
