Recipe: Gluten Free Donuts

When you go gluten-free life, as you know it, may seem like it’s over. Gone are your favorite breads, pastas, sauces, snacks, and worst of all – baked goods and desserts. But don’t despair, because this recipe will definitely become a favorite.

Now normally, I wouldn’t brag but DANG these were sooo good! Like ‘eat 4 and still want another’ good.

A Circle of Happiness

I concocted this recipe a few years ago when donuts were like the new obsession EVERYWHERE. So many stores were popping up with every combination imaginable and I was the one person who couldn’t partake…so I made my own!

And while donuts aren’t particularly good for you, I’ve decided that they are definitely good for your soul. Little circles of happiness that are a never-ending sugary path of adventure and every bite makes you feel alive inside. And it’s not just about that chocolate glaze or pink frosting with sprinkles, people. And they are the king of customization! Like cereal? It’s probably on a donut. Like Twix? That’s also probably on a donut. Donuts defy everything we think we know about sweet treats and I, for one, am not complaining.

And if you need 1 more reason to include donuts in your diet, I have kindly provided 7 below.

1. You can eat them for breakfast and dessert (or really any time)! If that isn’t the coolest thing ever, then I’m not sure about most things in life.

2. They come in all sizes. Perfect for just having a quick snack to a full meal. Don’t pretend as if you’ve never had a donut dinner.

3. Drinking any hot drink is a good excuse to pair with a donut. “Mmm, this hot chocolate is soo good. I think I’ll have a sprinkle donut too, actually.” It’s so easy.

4. They are very accessible. I mean, hello? I’m giving you a recipe to make in your very own home! But there are also so many places you can find a donut – even gluten-free ones. Gas stations, grocery stores, coffee shops, donut shops, probably in your office at work… Endless options, really.

5. They are a great conversation starter. “Oh, you like pink frosting with sprinkles too? Let’s be friends!” Don’t act like this has never happened to you.

6. Like surprises? You can get filled donuts! For the adventurous type, you can make or buy donuts that have yummy cream or jelly filling inside, as if the dough wasn’t already enough!

7. There is no such thing as a bad donut. It’s like pizza. Even when it’s bad, it’s still pretty good.

I mean, if these aren’t reason enough, I don’t know what will convince you. But since these are donuts we’re talking about, I’m pretty sure you need no further convincing.

And before you stress about having to go “buy all the ingredients,” I just used what I had on hand! I used my trusty Pamela’s Baking and Pancake mix for these babies! When I was making this recipe, I had 50 pounds of the stuff delivered to my front door. Made me so happy! Haha

Gluten Free Chocolate Glazed Donuts

  • 2 3/4 Cups Pamela’s Baking and Pancake mix
  • 1 Cup milk or buttermilk (optional: add 1 tablespoon vinegar or lemon juice to milk)
  • 1/4 Cup melted butter
  • 2 eggs
  • 1 cup white or brown sugar
  • 2 teaspoons vanilla
  • Optional: 1/4 tsp nutmeg
  • Optional: 1/4 tsp cinnamon

For the frosting/ganache:

  • 1 cup Chocolate Chips
  • 1/2 cup butterscotch chips
  • 8 Tbsp Heavy Cream (Original recipe called for 1 cup chocolate chips and 4-6 Tbsp Heavy Cream)


This recipe needs a kitchen doughnut maker machine or a doughnut pan. The batter is like a thick pancake batter. Pour vinegar and milk together and let sit for 5 minutes (if not using buttermilk) then mix all ingredients together and bake in doughnut machine according to machine directions OR pour into donut pan and bake in a preheated 350′ oven for 18-22 minutes. See tip below*

Melt the chocolate and cream using a double broiler method on the stovetop, stirring until smooth. Add more cream until you get a good consistency. Remove from heat and let cool in a bowl. The ganache will thicken as it cools.

Let donuts and ganache cool, one by one dip the donuts into the ganache and place on a wire rack to cool.

If you want more of a glaze than a frosting, try this on for size:

  • 1 Cup Milk Chocolate
  • 6 Tbsp Butter

Microwave chocolate and butter in a small bowl, stirring occasionally, until smooth, about 30 seconds. Cool glaze to room temperature, about 10 minutes

*tip: I let mine cook the full 22 minutes. I wanted them a little harder around the edges so the texture would be more like a “fried donut!” They were delicious and SO easy! My gluten-eating family all loved them and ate multiple!
